Linguine with Honey Whiskey Smoked Salmon
Ingredients
300g honey whiskey smoked salmon
1pkt of fresh linguine
600ml of thickened cream
90ml whiskey
Zest of 2 lemons
1tbs of honey seeded mustard
3tbs chopped chervil
Method
Bring large pan of water to the boil add linguine cook until al dent e drain
Remove salmon from skin discard skin & flake salmon with a fork
Add whiskey to large frypan heat & cook off alcohol
Add cream, lemon zest, seeded mustard cook until cream has reduced and thickened
Then add linguine, salmon and 2/3 chervil fold to combine ingredients
Serve sprinkle with remaining chervil

Shaved Parmesan
Serves 4

Crab Cakes
Ingredients
200g fresh Queensland crab (fresh only)
½ red onion, chopped finely
½ pkt water cracker biscuits (crushed)
1 beaten egg
1 large tablespoon mayonnaise
1 teaspoon black Worcestershire sauce
1 teaspoon English Mustard
Salt & pepper
6 drops Tabasco sauce
Breadcrumbs (fine)
Method
Combine crab, red onion and biscuits in a bowl. Add beaten egg and combine. Then add
mayonnaise, sauce, mustard, salt and pepper and Tabasco sauce
Shape into cakes. Press into breadcrumbs and fry gently in oil
Serve with green salad and slices of Queensland mango when in season or slices of
Queensland sweet pineapple

Smoked Salmon Bruschetta with Boconcini
Ingredients
Smoked salmon
Boconcini (from Gold Coast Farmers Markets)
2 x fresh Baked Baguettes
Bunch of home grown basil
Juicy ripe red tomatoes of choice
Olive oil
Cracked black pepper
Method
Chop ingredients. Layer and stack as desired
Dribble olive oil & crack black pepper
Serve on fresh white serving dishes & pour yourself a Drink. You deserve it!

Stuffed Veal Fillets
Ingredients
1tbs bacon cut into small pieces
1 small onion
2 garlic cloves crushed
1tbs parsley finely cut
2 mushrooms finely cut
1tbs dry sherry
add salt & pepper – stir fry 2-3 mins
add ¾ cup cooked mashed parsnips
add ¾ cup cooked rice to complete
Method
Mix all well together and put aside 8 small thinly sliced fillets of Veal lay out on table,
place filling on each
Roll up, dust with plain flour, grill for 7-8 mins
Serve two on each plate with a little gravy

Pork Fillet stuffed with Banana for 2 people
with mushroom Sauce
Ingredients
1 Pork fillet
1 Cavendish banana
Method
Trim fillet and take off sinews. Slice fillet down longways and use cooking mallet to flatten
out thinly. Peel and cut banana in half. Place banana on pork and wrap pork around to
completely cover. Spray oil or add 1tbs to frypan. Add pork to frypan keep turning to
brown all over.
Mushroom Sauce
Slice small onion and sauté, add 150 grams sliced button mushrooms, add ¼ cup of chicken
stock. Let boil down add ¼ of cup white wine
Add ¼ cup of cream let thicken
This dish is quite rich, so for vegetables, serve with beans, roast or mashed potatoes
